Welcome back to another month of culinary adventures here at The Celiac Scientist. As always, I'm excited to share my latest menu plan for April, packed with a delicious array of gluten-free dishes to tantalize your taste buds and inspire your home cooking.
One thing you'll notice about my approach to menu planning is that I strive to keep things fresh and exciting. With so many incredible recipes out there, there's simply no excuse for falling into a dinner rut. That's why each month brings a new lineup of dishes, ensuring a wide variety of flavours and cuisines to explore.
April is shaping up to be a busy month for us, with a few evenings earmarked for dining out. Of course, I'll be on the lookout for interesting dishes to recreate at home in the future. After all, there's nothing quite like the satisfaction of mastering a restaurant-worthy recipe in your own kitchen.
Now, you might notice a couple of instances where the same dish makes an appearance two days in a row. Don't worry, it's not a typo or me being lazy (well, maybe a bit)! It's simply a nod to the magic of bulk cooking, particularly when it comes to hearty stews and chilli con carne, which always seem to taste much better on the second day and provide the bonus of freeing up some time the next day.
So, let's dive into the mouthwatering lineup awaiting us this April. From comforting classics (because it still feels like winter here in the UK) to adventurous new flavours (like Moroccan cuisine), there's something for everyone to enjoy. Whether you're a seasoned home chef or just dipping your toes into the world of gluten-free cooking, I encourage you to give some of these meal ideas a try.

Monday 1- Chicken Kyiv, rough potato mash, balsamic honey glazed carrots and peas
Tuesday 2 - Beef stew with gluten-free dumplings
Wednesday 3 - Beef stew with potatoes (stew always tastes better on the second day!)
Thursday 4 - Cod loin, parsley sauce, new potatoes, carrots, and greens
Friday 5 - Ribeye steak, triple-cooked chips, mixed salad, and homemade coleslaw
Saturday 6 - DINNER OUT
Sunday 7 - Pork steak, creamed garlic mash with mixed roasted vegetables
Monday 8 - Seafood paella
Tuesday 9 - Steak and ale pie, braised cabbage, roasted carrots, and peas
Wednesday 10 - DINNER OUT
Thursday 11 - Tuscan chicken with pasta
Friday 12 - Fillet of beef Wellington, with truffle mash, broccoli, and Madeira sauce
Saturday 13 - Apple and Sausage pan roast with mash and cabbage
Sunday 14 - Moroccan lamb shank stew and vegetable couscous
Monday 15 - Chicken pot pie
Tuesday 16 - Salmon risotto and leaf salad
Wednesday 17 - Mexican beef rice skillet with tacos and salad
Thursday 18 - Chicken and pasta in white wine cream sauce
Friday 19 - Pork steaks, gin coriander sauce, truffle mash, broccoli, savoy cabbage
Saturday 20 - Lamb curry with rice
Sunday 21 - Roast chicken and vegetables
Monday 22 - Fishcakes, remoulade sauce and tender vegetables
Tuesday 23 - Chicken pitta salad
Wednesday 24 - Chilli con carne and rice

Friday 26- Braised cod and quinoa with creme caramel pudding
Saturday 27 - Beef burgers, salad etc
Sunday 28 - Lamb shoulder and red wine gravy, savoy, carrots
Monday 29- Sea bass, crushed Masquerade potatoes, caramelised carrots and greens
Tuesday 30 - Sweet chilli beef, sesame, salad
Wednesday 31 - Sausage and mixed root vegetable traybake
Thursday 1 - Coronation chicken and jacket potatoes with salad
Friday 2 - Spiced lamb cutlets with peach and pine nuts salad
*I know there are 30 days in April, but my meal plans run to the last day of the week when my next shopping delivery arrives!
