Welcome to another edition of The Celiac Scientist. As we now enter a new month, I thought I would share my meal plan for March. Yes, I have yet again planned out all our gluten-free meals across the entire month. To be honest, I got a little carried away and now have meal plans up to and including May! The feedback I received when I posted my meal plan for February was entirely positive, hence deciding to share again. I aim to always have something different throughout the month and I try not to repeat any meals from the previous month. There are so many recipes out there that I think there is little excuse for not having a wider variety of meals to try. Of course, I accept I have a lot of time to think up and prepare my meals and I know not everyone is in the same position. However, if my meal plan inspires you to try something new, then I’ll have achieved something.

March Gluten-Free Meal Plan
Saturday 2 - Home-made fish (haddock) finger rolls, fries, salad and beans
Sunday 3 - Meatloaf and roasted vegetables
Monday 4 - Lasagne and leaf salad
Tuesday 5 - Lasagne (late evening - no time to cook!)
Wednesday 6 - Pan-fried salmon fillet, sauteed potatoes, pan-roasted veg with sweet chilli sauce
Thursday 7 - Coconut lime shrimp with rice (new recipe!)
Friday 8 - Ribeye steak, sweat potatoes, mixed salad and homemade coleslaw
Saturday 9 - Home-made fish and chips, peas and salad
Sunday 10 - Roast beef and vegetables
Monday 11 - Chicken rice casserole
Tuesday 12 - Pork belly strips, parsley sauce, new potatoes, greens and carrots
Wednesday 13 - Spaghetti with prawns and chorizo
Thursday 14 - Beef stroganoff
Friday 15 - Pan-fried duck breast, celeriac mash and tender vegetables
Saturday 16 - Chicken korma, rice and poppadums
Sunday 17 - Slow roast pork belly (BBQ grilled) and vegetables
Monday 18 - Beef fajitas, rice and salad, wraps
Tuesday 19 - Pork and root vegetable puree, prunes, mash and greens (trust me, this is amazing!)
Wednesday 20 - Dinner out.
Thursday 21 - Teryaki chicken stir fry and noodles and beansprouts
Friday 22 - Monkfish tail wrapped in pancetta, sauteed potatoes, carrots and tender stem broccoli
Saturday 23 - Sweet and sour chicken and cashew nuts with rice
Sunday 24 - Smoked pork butt (shoulder) with buns, salad and coleslaw
Monday 25 - Chicken, leak and chorizo pie
Tuesday 26 - Gammon ham and chips, peas and salad
Wednesday 27 - Fisherman's pie
Thursday 28 - Garlic chicken rice bake
Friday 29* - Rack of lamb with mediterranean couscous
*I know there are 31 days in March, but my meal plans run to the last day of the week when my next shopping delivery arrives!
